Soft-Dried Fruit Processing Technology for Shaped Products Utilizing Local Raw Materials in Can Tho City

Food processing enterprises in Vietnam are actively investing in modern European-standard technologies to produce soft-dried fruits for export. This is not only a strategic move to enhance the value of agricultural products but also helps Vietnamese products become more competitive in the global market. Soft-dried fruits offer many advantages, such as preserving natural flavors, maintaining nutritional content, extending shelf life, and especially aligning with the growing consumer trend toward convenient and healthy food. Major markets such as the EU, USA, Japan, and South Korea have high demand for this product, but businesses must meet strict quality standards to successfully enter these markets. Although investment in processing technology and brand promotion requires significant costs, with the right strategy, the soft-dried fruit sector can become a promising export industry, contributing to the elevation of Vietnam's agricultural products on the global stage.

Currently, Can Tho has 18,436 hectares of fruit trees, with an annual harvest output of over 111,000 tons. Besides the consumption and export of fresh fruits, the processing of value-added products is a growing area of interest for the city. Shaped soft-dried fruits offer product variety and can attract a wider range of consumers, especially children. Therefore, the research and development of shaped soft-dried fruit aims to diversify the soft-dried fruit product line, initiate commercialization, boost the consumption of local fruit, increase economic value, support farmers, and address the problem of oversupply and falling prices during peak harvest seasons.

Vietnamese agricultural products have always been one of the country’s key economic sectors. The agricultural product processing industry is growing strongly and holds great export potential in the near future. Most fresh fruits have short harvest periods and are highly perishable, even under cold storage conditions. Therefore, producing fruit leather (fruit rolls) from fresh fruit is an effective preservation method. The project "Application of Soft-Dried Fruit Processing Technology to Create Shaped Processed Products Utilizing Local Raw Materials in Can Tho City" has identified optimal technical parameters for the soft-dried processing of five fruit types (Hoa Loc mango, Siamese banana, red-fleshed dragon fruit, soursop, and red-fleshed papaya).
