Nowadays, there have been many studies worldwide on producing germinated brown rice from paddy rice, with ample evidence demonstrating their health benefits due to various functional components such as high GABA content, phytic acid, γ-oryzanol, ferulic acid, and more. However, starch remains a drawback in germinated brown rice products, especially for people with diabetes or obesity. Based on domestic and international research, this project continues to improve the functional properties of germinated brown rice products and enhance their ability to slow sugar absorption, thereby increasing the effectiveness of the functional components in germinated brown rice. The Center for Application of Scientific and Technological Advances has received the technology transfer of the project titled “Research to Complete the Processing and Preservation Procedures for Functional Germinated Brown Rice Powder,” led by Associate Professor Dr. Nguyễn Công Hà.

The research successfully developed two processing methods for germinated brown rice powder: spray drying and roasting. The products have been tested and shown to possess excellent functional properties, including high GABA content, significant levels of other functional compounds, slower starch absorption, and increased resistance to absorption. The study also found that the spray-dried germinated brown rice powder has a positive effect in supporting the treatment of diabetes and liver cancer. The roasted germinated brown rice powder primarily offers nutritional benefits and serves as a supplementary support for patients. Moreover, the research outcomes contribute to producing high value-added rice products in the Mekong Delta, advancing sustainable agricultural development for both the Mekong Delta and Vietnam.
